Description:
As a Senior Sous Chef, you will play a key leadership role within a high-end, multi-outlet culinary environment, supporting the Head Chef in delivering premium, concept-led dining experiences with precision, consistency, and strong attention to detail.
This is a hands-on position within a fast-paced, high-profile setting, where quality, pace, and presentation are critical. You will take ownership of service, lead sections, and ensure dishes are executed to the highest standards across a variety of service styles, including small plates and event-led operations. Working across both event and non-event days, you will support overall kitchen performance, brigade development, and operational consistency. In the absence of the Head Chef, you will step in to lead the kitchen, maintaining standards, structure, and service delivery.
In this role you will:
- Support the delivery of a high-performing kitchen operation, ensuring consistent food quality and premium service standards across all services, including events and matchdays
- Execute menus in line with brand direction, maintaining high standards of consistency, precision, and quality control
- Support, guide, and develop the brigade, fostering a positive and high-performing kitchen culture
- Ensure full compliance with food safety, health & safety, and operational standards at all times
- Contribute to strong commercial performance through effective stock control, waste reduction, and efficient kitchen operations
Skills, Knowledge & Expertise
Essential
- Proven experience as a Senior Sous Chef or Sous Chef in a premium, high-volume restaurant or hotel environment
- Strong experience delivering breakfast, all-day dining, and evening service formats
- Ability to lead service and support a fast-paced kitchen operation with consistency and structure
- Strong leadership and team supervision skills
- Good understanding of food safety, hygiene, and allergen legislation
- Experience supporting stock control, food costs, and waste management
- Ability to train and support the development of junior chefs
- Strong organisational and time-management skills
- Calm and confident under pressure during busy service periods
- Passion for quality, detail, and guest experience
- Flexibility to work evenings, weekends, and event days
Desirable
- Experience in a premium or concept-led restaurant environment
- Experience supporting new openings or relaunches
- Exposure to menu development and seasonal changes
- Knowledge of quality suppliers and produce
- Experience working alongside large FOH teams
